Kefalotyri cheese is a hard, salty, white-yellow cheese produced from sheep milk or a combination with goat milk. It has a pleasant salty taste and rich aroma that is achieved after the completion of maturation, which lasts at least 3 months. It is consumed as a table cheese, cheese pie or melted (fried). Its average composition is 36.3% humidity, 28.8% fat and 16.6% proteins
